As a Philadelphia native with South American influence from his wife and partner, Chef Ernest Hines — the culinary force behind Spice The Americas Food Truck & Catering — dazzles his staff and patrons with unique fusions of taste and color. Chef Ernest began his career in 1990 at the Airport-Marriott Hotel and Soho Vallarie Restaurant in the Philadelphia Theater District. Since then, he has worked as an Executive Chef at various companies, gaining experience as an entrepreneur and leading special events and large gatherings. His passion and expertise now drive the innovation behind the Spice The Americas Food Truck Menu, delivering bold, artful flavors across Atlanta and beyond.
